I created an invoice today and it somehow got recorded as a "Pending (non-posting)" invoice. I cannot figure out what I did to make this happen! Can I make it a regular invoice without deleting and recreating it? Thanks.

Yes, with the pending invoice displayed in the Invoice window, choose Edit > Mark as Final (this removes Pending status from the invoice).
